  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper, optional
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced, optional
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. In a mixing bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using). Ensure all shrimp are evenly coated.
  2. In another bowl, combine thawed corn, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and salt. Mix well and set aside.
  3. Preheat your grill or grill pan over medium heat. Place shrimp on the grill and cook for 2–3 minutes per side until they turn pink and are fully cooked through.
  4. In a clean mixing bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and pepper until smooth.
  5. Layer corn salsa at the bottom of each bowl. Top with grilled shrimp followed by sliced or mashed avocado.
  6. Drizzle your creamy garlic sauce generously over the assembled ingredients in each bowl.
  7. Sprinkle sesame seeds and chopped green onions on top as a finishing touch.
