  • 23 lettuce leaves
  • Red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • Fresh herbs (parsley, dill, or cilantro)
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. 1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear over medium-high heat for 5-6 minutes on each side until fully cooked. Slice into strips.
  2. 2. Prepare the rice according to package instructions and let cool slightly.
  3. 3. In a mixing bowl, combine Greek yogurt with chopped herbs, lemon juice, salt, pepper, and optional chili flakes.
  4. 4. Slice cucumber and red onion; halve cherry tomatoes and tear lettuce into pieces.
