  • 4 cups low-sodium beef broth

  • 1 tbsp balsamic vinegar

  1. Sear the short ribs in a large pot over medium-high heat for about 5-7 minutes until browned on all sides. Remove and set aside.
  2. In the same pot, add sliced onions and cook over medium heat for 20-25 minutes until caramelized.
  3. Return the short ribs to the pot, add beef broth, thyme leaves, and balsamic vinegar. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove the short ribs and shred the meat from the bones. Discard the bones and return the meat to the pot.
  5. Serve in bowls topped with shredded Gruyère cheese and broil for about 5 minutes until bubbly and golden brown.
