  • 1 cup whipping cream (for topping)
  • 1/4 teaspoon vanilla flavoring (for topping)
  • 2 tablespoons confectioners' sugar (for topping)
  • 1/2 cup (4 ounces) softened cream cheese (for topping)
  • 4 ounces melted white chocolate baking squares
  • 1 cup whipping cream (for mousse)
  • 1 tablespoon confectioners' sugar (for mousse)
  • Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers, white sugar, egg yolk, vanilla flavoring, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes until golden. Cool completely.
  2. Beat softened cream cheese and sour cream until smooth. Gradually add cornflour, white sugar, and vanilla; pour over the cooled crust.
  3. Bake for approximately 38 minutes or until slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours.
  4. For the mousse topping, whip one cup of cream with confectioners' sugar until soft peaks form. Combine softened cream cheese with melted white chocolate; fold in whipped cream.
  5. Spread mousse over the chilled cheesecake layer and chill again for an hour before serving.
