  • 24 g lemon juice (optional)
  • 1 cup ice water
  • 113 g unsalted butter
  • 56 g bittersweet chocolate
  • 21 g Dutch process cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp salt
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temp)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the pie crust: In a mixing bowl, combine flour and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add lemon juice (if using) and ice water until dough forms. Shape into a disk, wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. Make the filling: Melt unsalted butter and bittersweet chocolate together until smooth. Stir in cocoa powder, espresso powder, and salt. In another bowl, whisk milk, sugars, cornmeal, eggs, and vanilla until combined. Gradually mix in the chocolate mixture.
