  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Add in the egg and vanilla extract, mixing until well combined.
  3. Gradually incorporate the flour, salt, and baking powder until just mixed. Use a cookie scooper to form balls of dough and place them on the prepared baking sheet.
  4. Create an indentation in each cookie ball for the pecan pie filling.
  5. For the filling, melt 5 tbsp butter and mix with brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt. Spoon this mixture into the indentations on each cookie.
  6. Bake for 8-9 minutes until lightly golden around the edges but soft in the center. Allow cooling before serving.
