  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)

Instructions

  1. Place raw chicken at the bottom of your slow cooker.
  2. Add chopped onion, minced garlic, Italian seasoning, crushed red pepper flakes (if desired), and crushed tomatoes.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  5. Shred cooked chicken and return it to the pot.
  6. Stir in heavy cream and add cornstarch slurry if thicker soup is desired.
  7. Gradually mix in Parmesan cheese until melted.
  8. Cook uncovered on low for an additional 20–30 minutes.
  9. Season with salt and pepper before serving hot.
