  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup flour
  • Refrigerated pie crusts (2)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix chicken breasts with carrots, celery, peas, onion, and garlic.
  2. Sprinkle flour, salt, pepper, thyme, and rosemary over the mixture; stir to coat.
  3. Pour in chicken broth and heavy cream; stir until well combined.
  4. Transfer mixture to the crock pot and cover with the lid. Cook on low for 6 hours or high for 3 hours until tender.
  5. Preheat the oven to 425°F (220°C) about 30 minutes before serving.
  6. Roll out one pie crust into a pie dish; pour in cooked chicken mixture.
  7. Cover with second pie crust; seal edges and cut slits for steam escape.
  8. Bake for 25-30 minutes until golden brown. Let cool before slicing.
