  • 2 cups basmati rice
  • 2½ cups low-sodium chicken broth
  • 1 pound sirloin steak
  • 1 can (14 oz) crushed tomatoes
  • 2 cloves garlic, finely minced
  • 1 small yellow onion, finely diced (optional)
  • 1 teaspoon sweet paprika
  • ½ teaspoon ground cumin
  • 2 tablespoons extra-virgin olive oil
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • Montreal steak seasoning to taste
  • White queso sauce for drizzling
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat olive oil in a large heavy-bottomed pot over medium heat. Sauté finely diced onion and minced garlic until fragrant.
  2. Toast rinsed basmati rice in the pot, stirring for 2–3 minutes.
  3. Stir in paprika and cumin, then add crushed tomatoes, chicken broth, and crumbled bouillon cube. Mix well.
  4. Bring to a boil, cover, and simmer on low heat for 18–20 minutes.
  5. While rice cooks, season sirloin strips with Montreal steak seasoning and sear in a skillet with butter until browned.
  6. After rice rests for 5 minutes off heat, fluff with a fork and adjust seasoning.
  7. Serve rice topped with steak strips, drizzle with queso sauce, and garnish with fresh cilantro.
