  • 1 pound boneless, skinless chicken breast, diced
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups uncooked penne pasta (or any short pasta)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian herbs
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken seasoned with salt and pepper. Cook until browned, about 5-7 minutes, then remove from the pot.
  2. In the same pot, add chopped turkey bacon or omit. Add minced garlic and cook for one more minute.
  3. Return the chicken to the pot, pour in chicken broth, and bring to a simmer. Stir in heavy cream, followed by uncooked pasta, paprika, and Italian herbs; mix well.
  4. Cover and simmer for 12-15 minutes until pasta is tender, stirring occasionally.
  5. Fold in fresh spinach and cook for an additional 2-3 minutes until wilted. Adjust seasoning as needed before serving warm.
