Ingredients

Scale
  • 8 ounces fettuccine or penne pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups heavy cream (or half-and-half for lighter version)
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with Italian seasoning, paprika, salt, and pepper. Cook until golden and fully cooked, about 5-6 minutes per side. Remove from pan and slice into strips.
  3. In the same skillet used for chicken, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Sprinkle flour over garlic to form a roux. Cook for 1–2 minutes.
  4. Slowly whisk in heavy cream and simmer until sauce begins to thicken, about 3–4 minutes. Stir in Parmesan cheese and optional red pepper flakes. If the sauce is too thick, add a splash of chicken broth.
  5. Return sliced chicken and drained pasta to skillet and toss until evenly coated in sauce.
  6. Garnish with fresh parsley and extra Parmesan before serving.
