Ingredients

  • Orzo pasta
  • Fresh broccoli florets
  • Minced garlic
  • Finely chopped onion
  • Cream or half-and-half
  • Grated Parmesan cheese
  • Butter
  • Olive oil
  • Boneless chicken breast (cubed)
  • Fresh parsley for garnish
  • Salt & black pepper

Instructions

  1. Cook the orzo: Boil salted water in a large pot. Add orzo and cook until al dente (8-10 minutes). Add broccoli florets during the last 2 minutes. Drain and set aside.
  2. Prepare the chicken: In a skillet, heat olive oil over medium heat. Cook seasoned cubed chicken until golden brown (6-8 minutes). Remove and set aside.
  3. Create the sauce: In the same skillet, melt butter, sauté onion and garlic until fragrant. Stir in cream and Parmesan until combined.
  4. Combine everything: Add cooked orzo and broccoli to the skillet, toss to coat in sauce, then fold in chicken.
  5. Serve hot, garnished with parsley and extra Parmesan if desired.
