  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil (liquid state)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • For the cream cheese filling:
  • 1 large egg
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. In a large bowl, combine the pumpkin puree, sugars, coconut oil, sour cream, egg, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, and whisk until smooth. Gently fold in the flour, baking powder, baking soda, and optional salt until just combined.
  3. Pour two-thirds of the batter into the prepared pan. In another bowl, mix the cream cheese filling ingredients until smooth. Layer over the batter in the pan. Top with remaining batter.
  4. Bake for about 48 minutes or until a toothpick inserted comes out clean.
  5. Allow cooling in the pan for about 15 minutes before transferring to a wire rack.
