  • 1/2 cup Butter
  • 1 cup Granulated sugar
  • 2 tsp Vanilla extract
  • 1 tbsp Espresso powder
  • 1/2 tsp Kosher salt
  • 2 Eggs
  • 1/3 cup Sour cream
  • 1/2 cup Buttermilk
  • 1 2/3 cup Flour
  • 1 1/3 tsp Baking powder
  • 1 1/3 cups Heavy cream
  • 1 tsp Espresso powder
  • 3 tbsp Powdered sugar
  • 1 tbsp Instant vanilla pudding

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in sour cream, buttermilk, vanilla extract, espresso powder, and salt.
  3. In another bowl, whisk together flour and baking powder. Gradually add this mixture to the wet ingredients until well combined; do not overmix.
  4. Line your muffin tin with cupcake liners. Using an ice cream scoop or spoon, fill each liner about two-thirds full with batter.
  5. Place the muffin tin in the preheated oven and bake for about 18 minutes or until a toothpick inserted comes out clean.
  6. Remove cupcakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  7. In a mixing bowl, beat heavy cream until soft peaks form. Gradually add powdered sugar, espresso powder, vanilla extract, and instant pudding mix while continuing to beat until stiff peaks form.
  8. Once cooled, pipe or spread frosting on each cupcake using your favorite technique.
