  • 1 tbsp tomato paste (optional, for depth)

  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Begin by trimming any excess fat from the beef cubes. Chop the onion, mince the garlic, and grate the ginger. Having all your ingredients ready will streamline the cooking process.
  2. In a heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef cubes with salt and pepper. Add them to the pot in batches to avoid overcrowding. Sear until browned on all sides. Remove and set aside.
  3. In the same pot, add more oil if necessary. Add the chopped onion and sauté until translucent. Stir in the minced garlic and grated ginger; cook until fragrant.
  4. Sprinkle in the curry powder, ground cumin, ground coriander, and turmeric (if using). Stir well to coat the onions in spices for about 1 minute.
