  • 2 1/2 pounds bone-in skin-on chicken thighs
  • 34 links hot Italian sausage (or mild)
  • 1 medium onion
  • 1 large red bell pepper
  • 8 cloves garlic
  • 10 pickled cherry peppers
  • 1/2 cup dry white apple vinegar
  • 1 cup low-sodium chicken stock
  • Fresh parsley for garnish
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Season chicken thighs generously with salt and pepper. Heat vegetable oil in a cast iron skillet over medium-high heat.
  2. Sear the chicken until golden brown on both sides. Remove and set aside.
  3. In the same skillet, cook sausage links until browned. Remove from pan.
  4. Sauté sliced onion, red bell pepper, and garlic until tender.
  5. Stir in pickled cherry peppers and their juice; cook for 2-3 minutes.
  6. Deglaze with vinegar while scraping up browned bits; let reduce slightly.
  7. Return chicken and sausage to skillet; add chicken stock.
  8. Cover and simmer on medium-low heat for 20–25 minutes until cooked through.
