  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon smoked paprika
  • Pinch of saffron threads (optional)
  • 1.5 cups short-grain rice (Bomba or Arborio)
  • 3.5 cups chicken broth
  • 1/2 cup diced tomatoes or 1 tablespoon tomato paste
  • 1/2 cup green peas
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Season chicken with salt, pepper, and smoked paprika.
  2. Heat olive oil in a large skillet or paella pan over medium heat; sear the chicken until browned (about 5–6 minutes). Remove and set aside.
  3. In the same pan, sauté onion and garlic until fragrant; add bell peppers and cook until softened.
  4. Stir in diced tomatoes or tomato paste along with remaining spices; cook briefly to enhance flavors.
  5. Add rice to coat with the mixture; pour in warm broth and stir once before stopping.
  6. Return chicken to the pan; simmer uncovered for 20–25 minutes until rice is tender.
  7. In the last five minutes, scatter peas on top without stirring to form socarrat.
  8. Let rest covered loosely for 5–10 minutes before serving with fresh parsley and lemon wedges.
