  • 1.5 pounds boneless chicken breasts or thighs, thinly sliced
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or Tajin
  • 1 yellow onion, sliced
  • 3 bell peppers, sliced
  • 3 cups grilled corn kernels
  • Cooked rice (for serving)
  • Shredded lettuce
  • Avocado
  • Jalapeños
  • Cilantro

Instructions

  1. In a large skillet, heat olive oil over high heat. Add sliced chicken and season with smoked paprika, chili powder (or Tajin), cumin, salt, and pepper. Cook for about 8-10 minutes until fully cooked.
  2. Add chopped garlic in the last two minutes of cooking.
  3. Remove the chicken and add sliced onion to the same skillet. Sauté until fragrant (about 5 minutes), then add bell peppers and cook until tender (another 5 minutes).
  4. Return the chicken to the skillet and mix everything well.
  5. Serve over bowls of cooked rice with grilled corn and your choice of toppings.
