  • 2 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of bread (sourdough or ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Olive oil for grilling

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–7 minutes per side until cooked through. Let rest and slice thinly.
  2. Slice the avocado and prepare your cheese.
  3. Spread mayonnaise and Dijon mustard on one side of each bread slice.
  4. On two slices of bread, layer chicken, avocado, cheese, red onion, and tomato. Top with remaining bread slices (mayo side down).
  5. Grill sandwiches in a skillet with olive oil over medium heat for 3–4 minutes per side until golden brown and cheese melts.
  6. Let cool slightly before slicing in half to serve warm.
