  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or cheese blend)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes into halves or quarters.
  3. Slice the smoked turkey sausage into 1/4-inch thick rounds.
  4. In a small bowl, combine ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large mixing bowl, toss the potatoes with olive oil and half of the seasoning mixture until coated.
  6. Line a baking sheet with parchment paper or grease it lightly.
  7. Spread the seasoned potatoes evenly on the baking sheet and top with sliced sausage.
  8. Roast in the oven for about 35-40 minutes, stirring halfway through until golden brown.
  9. Sprinkle shredded cheese over the mixture and return to the oven for an additional 5 minutes until melted.
