  • ½ cup shredded unsweetened coconut (plus more for rolling)
  • 1 tablespoon coconut oil (optional)

  • Pinch of salt

Instructions

  1. In a food processor, pulse the raw cashews until coarsely ground.
  2. Add the pitted dates, shredded coconut, coconut oil (if using), vanilla extract, and a pinch of salt. Process until you achieve a sticky dough.
  3. If too dry, add 1–2 teaspoons of warm water; if too sticky, incorporate more shredded coconut.
  4. Roll small portions into bite-sized logs or balls.
  5. Coat each piece in additional shredded coconut until evenly covered.
  6. Place on a parchment-lined tray and refrigerate for 30 minutes to firm up.
