  • 24 ounces cream cheese, brick-style
  • ¾ cup granulated sugar (for cheesecake layer)
  • ¾ cup sour cream (for cheesecake layer)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. For the carrot cake layer, whisk together eggs, both sugars, sour cream, oil, and vanilla until smooth. In another bowl, combine flour with baking powder, baking soda, salt, and spices. Fold in shredded carrots before gradually adding dry ingredients.
  3. Pour batter into a lined springform pan and bake for 30–35 minutes; cool before removing from the pan.
  4. For the cheesecake layer, beat softened cream cheese until smooth, then mix in sour cream and sugar. Slowly add eggs one by one until just combined.
  5. Assemble the layers in the springform pan and bake in a water bath at 325°F (163°C) for 55–65 minutes. Cool gradually in the oven before chilling in the refrigerator for at least 5 hours.
