  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 2 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 4 tbsp unsalted butter
  • 1 tbsp cornstarch (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust, cream together softened butter and granulated sugar until fluffy. Mix in flour and salt until a crumbly dough forms. Press into the prepared pan and bake for 20–22 minutes until lightly golden. Let cool.
  3. For the blueberry curd, cook blueberries in a saucepan over medium heat until juicy. Blend with lemon juice and zest until smooth; strain if desired.
  4. Whisk eggs and remaining sugar in a heatproof bowl; slowly mix in the warm blueberry mixture. Cook over low heat until thickened, stirring constantly.
  5. Pour the blueberry curd over the cooled crust and bake again for 10–12 minutes. Cool completely and refrigerate for at least 2 hours before slicing.
