  • 1 cup finely ground pistachios
  • ½ cup powdered sugar (divided)
  • 1 cup softened cream cheese
  • ½ cup granulated sugar
  • 2 cups fresh blackberries
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. Combine crushed digestive biscuits with melted butter and press firmly into the bottom of the pan to form the crust.
  3. In a mixing bowl, blend ground pistachios, ¼ cup powdered sugar, and heavy cream until smooth. Spread over the crust and chill.

  5. In a saucepan, mix blackberries, granulated sugar, lemon juice, and cornstarch; cook over medium heat until thickened.
