  • 225g fresh or frozen pitted cherries
  • 50g granulated sugar
  • ½ Tablespoon lemon juice
  • ⅛ teaspoon almond extract
  • ⅛ teaspoon salt
  • 480g heavy whipping cream
  • 20g unsweetened cocoa powder
  • 1 can (14oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 4 brownies, chopped into small pieces
  • Chocolate shavings

Instructions

  1. Prepare the cherry compote by simmering cherries with sugar, lemon juice, and salt in a saucepan for about 10 minutes until thickened. Cool to room temperature.
  2. Whip heavy cream with cocoa powder and vanilla extract to stiff peaks in a large bowl. Gently fold in sweetened condensed milk.
  3. Add chopped brownies and fold gently into the mixture.
  4. Layer one-third of the ice cream mixture in a loaf pan, dollop one-third of the cherry mixture on top, and swirl together. Repeat layering until all ingredients are used.
  5. Cover tightly and freeze for at least 7 hours before serving.
