Ingredients

Scale
  • 1.5 lbs beef tenderloin
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 tbsp fresh thyme (or rosemary)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Pat the beef tenderloin dry; rub generously with salt, pepper, and Dijon mustard.
  3. Heat olive oil in an oven-safe skillet over medium-high heat; sear the beef until golden brown on all sides (about 3-4 minutes per side).
  4. Transfer the skillet to the preheated oven; roast for 15-20 minutes until internal temperature reaches 145°F (63°C). Let it rest.
  5. In the same skillet, sauté minced garlic until fragrant, add chicken broth while scraping browned bits, stir in heavy cream and remaining Dijon mustard until combined.
  6. Slice rested beef into medallions; drizzle with sauce before serving.
