  • 1.5 lbs beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup peas (optional)
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • 4 cups prepared mashed potatoes
  • 2 tbsp butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a Dutch oven, heat olive oil over medium-high heat. Brown the beef chunks on all sides; then remove and set aside.
  3. Sauté onion and garlic in the same pot until softened.
  4. Return beef to the pot and stir in tomato paste and Worcestershire sauce. Pour in beef broth and bring to a boil.
  5. Reduce heat and simmer for about 1.5 to 2 hours until beef is tender.
  6. Add carrots, celery, and peas (if using) to the pot; cook until tender, about 15 minutes.
  7. Transfer stew to a baking dish and spread prepared mashed potatoes over the top; dot with butter.
  8. Bake for about 20–25 minutes until potato topping is golden brown.
