  • 2 medium sweet potatoes, peeled and chopped into 1/2" chunks
  • 1 large yellow onion, chopped into 1 inch pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1 medium head broccoli, chopped into florets
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop sweet potatoes and onion. Place on a parchment-lined baking sheet, drizzle with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder; toss to coat. Roast for 20 minutes.
  3. Add chopped broccoli to the pan and push vegetables aside. Place chicken breasts on the sheet and brush with 1/4 cup of BBQ sauce. Bake for another 15-20 minutes until chicken is cooked through.
  4. Shred the chicken using forks and mix with the remaining 1/4 cup BBQ sauce.
  5. Serve by dividing chicken and veggies into bowls.
