  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 pound roast beef, thinly sliced
  • 1 cup provolone cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1 1/2 cups beef broth
  • 1 tablespoon soy sauce

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in buttermilk until just combined. Turn dough onto a floured surface and knead gently until smooth.
  4. Roll out the dough to about half an inch thick and cut into squares. On half of the squares, layer roast beef, provolone cheese, and parsley before topping with remaining squares. Seal edges with a fork.
  5. Place on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  6. For the au jus, simmer beef broth with soy sauce for about five minutes.
