  • 3 cups butternut squash, cubed
  • 1 tablespoon olive oil
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage or chicken sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Fresh thyme leaves

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes.
  3. Toss Brussels sprouts with olive oil, salt, and pepper. Roast on a separate sheet for 20-30 minutes.
  4. Cook bow tie pasta in boiling water until al dente; drain and set aside.
  5. In a skillet over medium heat, cook sliced sausage until browned (about 8 minutes total). Remove from skillet.
  6. In the same skillet, sauté garlic until softened; add butter to melt.
  7. Add cooked pasta to the skillet; mix well with garlic butter sauce.
  8. Combine roasted veggies and sausage into the skillet; gently toss to combine.
