  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (substituted with chicken or turkey sausage)
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C (400°F). Line baking sheets with parchment paper.
  2. Toss butternut squash with olive oil, salt, and pepper; roast for 15-20 minutes.
  3. Prepare Brussels sprouts similarly; roast for 20-30 minutes alongside the squash.
  4. Boil water in a large pot; cook bow tie pasta until al dente. Drain and set aside.
  5. In a cast-iron skillet, heat olive oil; sauté sliced smoked sausage until browned.
  6. Add minced garlic to the skillet; cook until softened. Incorporate butter and melt completely.
  7. Toss cooked pasta in the garlic butter sauce; season to taste.
  8. Mix in roasted vegetables and fresh thyme; serve warm.
