  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by combining diced apples, apple butter, granulated sugar, water, lemon juice, ground cinnamon, vanilla extract, fine sea salt, cornstarch, and additional water in a saucepan. Cook over medium heat until apples soften slightly; let cool.
  2. Make the dough by mixing water with bread flour to create tangzhong. In another bowl, combine remaining bread flour, granulated sugar, instant yeast, and fine sea salt. Mix in milk, heavy cream, egg, vanilla extract, and tangzhong until a soft dough forms.
  3. Knead the dough until smooth and elastic. Place it in a greased bowl and let rise until doubled in size.
  4. Roll out the dough into a rectangle; spread cooled filling evenly over it.
  5. Roll tightly into a log shape and cut into equal pieces; place in a greased baking dish.
  6. Allow rolls to rise again until puffed up before baking at 350°F (175°C) for about 30 minutes or until golden brown.
  7. Prepare frosting by beating together unsalted butter and cream cheese; gradually mix in powdered sugar and heavy cream until smooth.
  8. Frost warm rolls generously before serving.
