  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock or broth
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges
  • kosher salt
  • freshly cracked black pepper

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Trim excess fat from the beef and season generously with salt and pepper.
  3. In a heavy-duty Dutch oven, heat oil over medium-high heat and sear the beef on all sides until browned.
  4. Whisk together apple cider, chicken stock, dijon mustard, and dehydrated minced onion.
  5. Add the braising liquid to the pot along with garlic and herb bundle; cover and transfer to the oven.
  6. Braise for about 3 hours, flipping halfway through cooking. Add onion slices and apple wedges during the last 30-45 minutes.
  7. Let rest before serving, spooning juices over the meat.
