  • ½ cup granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • ½ cup melted butter
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (such as Gala or Honeycrisp)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8 x 5 inch loaf pan or line it with parchment paper.
  2. In a small bowl, combine brown sugar and cinnamon; set aside.
  3. In a large mixing bowl, whisk eggs and granulated sugar until smooth.
  4. Mix in melted butter and vanilla until well combined.
  5. Stir in flour, baking powder, baking soda, and salt until just combined.
  6. Gently fold in chopped apples.
  7. Pour half the batter into the prepared pan, sprinkle with three-quarters of the cinnamon-sugar mixture, then add remaining batter on top.
  8. Sprinkle with the rest of the cinnamon-sugar mixture and swirl gently into the batter.
  9. Bake for about 35 to 45 minutes until golden brown and a toothpick comes out clean.
  10. Allow to cool completely before slicing.
